Eric Jones, Ph.D.
Associate Professor in the Department of Foundational Medical Studies
Dr. Eric Jones is a biochemist with research interests in metabolism, systems biology, protein chemistry, and high-impact teaching methods in applied biochemistry. He received his B.S. and Ph.D. from Case Western Reserve University and performed postdoctoral work in proteomics and biophysics at Pacific Northwest National Laboratory and the University of Washington. Before arriving at OUWB in 2024, Dr. Jones was a professor of biochemistry at California Polytechnic State University in San Luis Obispo, California, for 11 years. His past research included mechanisms of prion transmission, structural studies of allostery in proteins, and amyloidoses. More recently, he has focused on scientific higher education, and has been involved in projects assessing the impact of self-directed laboratory coursework and computational simulations in biochemistry on knowledge integration and student confidence. He comes from a family of medical professionals and is enthusiastic about bridging fundamental science with medical reasoning.
